Carne Salada

Carne Salada is a specialty of Northern Italy, tipical of Trentino region.

It's made from the beef rump cleaned of all fat, so it's a very light meat, flavoured with spices and brine.

It can be served as a cold dishes, sliced like carpaccio, or cooked or smoked.
